I don’t have to tell the parents in the crowd how hard it can be to get wholesome, nutritious food into kids. My boys are forever rooting around in the kitchen in search of something to eat. Being active kids, they also don’t want to spend much (read: any) time preparing anything to eat–they’re grab it and go kind of boys. Truth be told, Bacon Slayer and I are much the same way. All too often it’s easy for us to fall into what I call a Convenience Food Trap of snacking on crackers, or other things that come in hermetically sealed wrappers.

While convenience foods can temporarily curb a case of the munchies, the nutrition provided by most of them is sorely lacking. Not only are boxed snacks expensive, but they don’t have much staying power. I just know that if we don’t incorporate some form ofrealprotein in a snack, thensoonthe cupboard doors will be rattling open because my boys will be on the hunt for more sustenance.

I try to teach my kids that their best bet is to grab some protein with a fruit or vegetable when it comes to meals and snacks. It’s that protein/fruit/veggie combination that keeps them satisfied for a longer period of time, making it a lot easier on the budget. Believe me–I have to get as much bang for my buck as possibleto feed a house full of perpetually hungry boys.

Which is precisely the reason why we drink a lot of healthy smoothies around here. Dairy products are an inexpensive source of protein, and something that everyone in our house loves.I make smoothies at least four or five days each week for breakfast or snacks. I love them because theytake all of five minutes to make, and I can stuff all sorts of nutrition in them to satisfy growing appetites.While the ingredient combinations often change, my smoothie base is always the same: 2% milk and vanilla yogurt.

I can add a variety of fruits, veggies, and whole grains to themilk/yogurt base. Then I give it a quick spin in the blender, and voila! A healthy and filling snack in a manner of minutes.

As an added bonus, smoothies are completely portable. We can take them on the road when necessary.

Ingredients

  • 1 C. 2% Milk
  • ½ C. Greek style vanilla yogurt (store bought or homemade )
  • 1 C. baby spinach, washed and patted dry
  • 1 C. frozen blueberries
  • 1 fresh banana, peeled
  • ¼ C. rolled oats
  • 1-2 tsp. homemade chocolate syrup (optional)

Instructions

  1. Place all ingredients into a blender carafe. Cover the carafe and blend on high speed for one minute, or until creamy and smooth. Serve immediately.

Notes

This recipe is easily scaled up or down, as needed. Smoothies may also be made in advance and frozen for later consumption. Simply pour the smoothie into a freezer safe container with a lid--leaving 1 inch of head space--and freeze. Frozen smoothies can double as ice packs in packed lunches, which should reach a slushy, soft serve consistency in about four hours.
