Keto Popcorn(Keto Puffs)

You’ll love these homemade keto puffs, which are a great Keto popcorn substitute! All you need is cheese and some patience. A quick and easy low-carb snack.

One ingredient: cheese. Nonetheless, it’s a snack I enjoy making on a regular basis, and I refer to it as “Keto popcorn.”

Full disclosure: I do occasionally consume “real” popcorn. My daughter has a popcorn machine that she uses on movie nights. We like our corn salted and buttered.

IS IT POSSIBLE TO EAT POPCORN ON A LOW CARB DIET?

In the grand scheme of things, maize popcorn isn’t the worst snack option.

One cup of air-popped corn has less than 5 net carbs, which is relatively low. The issue is, of course, the quantity. A typical serving of popcorn is 24 grams (3 cups), with 18 grams of carbohydrates and 4 grams of fiber.

HOW TO CREATE

You can make these adorable little cheese puffs with a variety of cheeses and methods. I used parmesan and two kinds of cheddar.

PARMESAN.

In the image above, on the left. In the food processor, I blitzed it. I then separated the smaller bits with a sieve and only used the larger ones.

CHEDDAR, MATURE.

The image’s top right corner. I crumbled a block of cheddar with my hands. This results in more evenly sized rounded pieces (pop-corny even before popping!). It’s a little salty, so you’ll be satisfied quickly. It is my personal favorite.

PRE-SLICED MILD CHEDDAR

On a grey background. This produces airy bubbles with little flavor. I don’t normally buy this type of cheese because I find it to be quite bland.

Cover it with a kitchen towel or muslin (to prevent dust accumulation) and leave it in a dry, warm place for 3 days to completely dry out. Your Keto popcorn will only pop if it is completely dry and hard.

3.) After 3 days (or 2 days if your cheese was dry to begin with), preheat your oven to 200 Celsius / 390 Fahrenheit and bake the cheese for 4-5 minutes. Place a second baking tray above your cheese tray to keep the pieces from flying around.

This low carb popcorn substitute is super crunchy and crispy, and I think it would make an excellent snack. Experiment with various cheeses to discover your personal favorite!

INGREDIENTS

100g / 3.5 oz cheddar

INSTRUCTIONS

  1. If you’re using sliced cheddar, cut it into 0.5-inch (1-cm) squares. If you’re using a cheddar block, crumble it into the same size with your hands.
  2. Cover the cheese with muslin or a kitchen towel to keep it dust-free and store it in a cool, dry place for up to 3 days. The cheese should be completely hard and dry.
  3. Preheat your oven to 390 degrees Fahrenheit. Bake for FOUR-FIVE minutes, on a baking tray lined with parchment paper. Place a second baking tray closely above the tray to keep it from popping all over your oven.

NOTES:

  • I estimated 1 portion to be about 1 handful of cheese popcorn.
  • Sharp cheddar and parmesan are more satisfying than mild, pre-sliced cheddar. The latter, on the other hand, tastes more like “real” popcorn, with a more neutral flavor.
  • If the cheese is not completely dry or the pieces are too large, it will melt rather than pop. Patience is essential!
